Hello hello! :) Remember the tropical food table I have been sharing at the beginning of summer? One of the recipes I made were those delicious pineapple cupcakes and today I'm telling you how to bake those yourself. You should definitely make them before summer is absolutely over. :)
Ingredients for your Pineapple Cupcakes
- 200g flour
- 200g sugar
- 1/2 package of baking powder, some fresh vanilla and a tea spoon tip of salt
- 60g butter
- 250ml milk
- 2 eggs
- A fresh pineapple
- 20 cupcake (paper) tins
For the frosting you need:
- A little bit of fresh pineapple juice
- Powder sugar
The exact amount of ingredients for the frosting depends on the consistency you prefer. For 20 cupcakes, I used one package of powder sugar, about 150g butter and one tea spoon of pineapple juice.
Make Fresh Pineapple Cupcakes
First of all, chopp some pineapple pieces. To make your cupcakes, mix all the ingredients for the dough and add the pineapples.
Pour the dough into the paper tins and fill them half (about 50-60%). Let them bake in the oven for about 20-30 minutes (depends on the kind of oven you have - we have gas, so it's always difficult to stick to an exact time).
Afterwards mix the ingredients for your topping.
