24 New Recipes // Number 5: Minestrone.

Hello! :) This is a recipe <3 Anja showed me last summer and it is sooo delicious. :) Minestrone is an Italian vegetable soup / stew and it's pretty healthy.

You need:
- Spaghetti
- Celery
- Tomatoes
- Carrots
- Onions
- Garlic
- Tomato purée
- Parmesan
- Vegetable broth
- Olive oil
- Herbs like oregano, basil, rosemary and thyme
- Salt and pepper

Chopp all vegetables or cut them into thin slices. Then, first you need to steam the celery in a huge pan (use some olive oil), because the celery is the vegetable which takes really long to become soft. Then, when the celery has become softer, add the tiny pieces of onion and garlic to steam them, too, and after that, add vegetable broth and some water, the carrots and spaghetti and let everything cook until it is soft. Don't forget to stir everything from time to time. Next, add the chopped tomatoes, some tomato purée and herbs. :) When all ingredients are soft, your dish is ready and you can scatter some parmesan on the stew when it's on your plate. :)
Minestrone also tastes awesome when it is cold, so you can cook a little bit more and eat the rest the other day. :)
